I created a winery called Tail End Wines (literally “wines from the end of the line”) in the DOC San Rafael region of Argentina. The playful twist of the project is that each label features the rear of a typical Argentine animal. There’s a herbivore for a Chardonnay, a carnivore for a Cabernet Sauvignon, and an omnivore for a Malbec. Each wine-animal pairing is carefully chosen to reflect the ideal food pairing.   The Llama (Llama Butt), being herbivorous, is paired with the Chardonnay, which complements salads with honey or mustard dressings, mushroom dishes, and sushi. The Wild Boar (Hog Butt), as an omnivore, is linked to the Malbec, perfect for pairing with red meats, barbecues, richly flavored pizzas, ribs, stews, and sautéed vegetables. The Jaguar, being carnivorous, is paired with the Cabernet Sauvignon, ideal for grilled or stewed red meats, as well as mature, rich cheeses like Cheddar, Gouda, or Parmesan, accompanied by nuts.
